Manic Muffin Monday

Peanut Butter Muffins via Evermore Paper Co.

The only manic thing about this Monday is that I may eat a dozen of these peanut butter banana muffins. During my senior year of college I liked to bake banana, blueberry or chocolate chip muffins at the start of each week so that my roommates and I could eat breakfast on the go. It always made Monday mornings slightly easier and I decided it's time I reinstate the habit. I conveniently had three perfectly ripened bananas on hand and decided to add some peanut butter for a little extra flavor. They turned out perfectly moist and are just what I needed to get this week going.


1 1/2 C flour
1 t baking soda
1 t baking powder
1/2 t salt
3 ripened bananas
3/4 C sugar
1 egg white
2 T peanut butter
1/3 C melted butter


1. Preheat oven to 375 degrees. 

2. Mix together flour, baking soda, baking powder, and salt. In another bowl, mash bananas. sugar, egg white and peanut butter together, and then mix in melted butter. 

3. Add banana mixture to dry ingredients and mix until just moistened.

4. Fill muffin cups (I love these) until 3/4 full. Bake 18-20 minutes or until a toothpick inserted in the middle comes out clean. 

Treat Yourself Friday: Lemon-Blueberry Muffins


It’s been a busy and exhilarating first week for Evermore, and since I’m a huge proponent of positive reinforcement, I think it’s only right that we take the time to reward ourselves at the end of the week. That is why I’m excited to introduce my “Treat Yourself Friday” series where I’ll be posting recipes and other random goodies to help get your weekend started right.

First up are these lemon-blueberry muffins. I originally had much healthier plans for the 2 lbs. of blueberries I bought on sale this past week. I was looking forward to using them in smoothies, sprinkling them on top of yogurt and granola or just snacking on them straight from the carton. But naturally, my sweet tooth kicked in and after tasting the combination of blueberries with a lemon glaze and hint of nutmeg, I certainly have no regrets, and neither should you.
